What you do is pump the air out of the bottle, giving a vacuum.

The vacuum means the wine cannot react with air creating oxidation.

This keeps the wine fresher for longer.

The stopper acts like a one way valve, stopping air returning as you suck it out with the wine pump.

The stopper holds the vacuum, until you press the button on top. This allows air to return and you can remove the stopper and enjoy your wine.
